Can you breed dogs certain ways?

I've been learning alot about specific dog breeds lately, where most dog stores get there pups from etc etc. But is it true you can breed puppies a certain way? Like i don't understand these terms people say on the internet. Like for example "This animal had this bred out of him/her" How can you breed something out of a dog ? I know you can train a dog to be a certain way , but can you really breed a gene out of him ? Someone please explain? Thankyou.
